American Express presents limited edition menus at Shangri-La Hotel, Singapore, Singapore Marriott Tang Plaza Hotel, The St. Regis Singapore and W Singapore – Sentosa Cove

Singapore, 2 March 2017 – Get your forks ready! From 4 March, American Express is bringing foodies limited edition dining experiences at Shangri-La Hotel, Singapore, Singapore Marriott Tang Plaza Hotel, The St. Regis Singapore and W Singapore – Sentosa Cove.

The American Express Love Dining Celebrity Edition menus have been crafted in collaboration with celebrity influencers Pornsak, Jeanette Aw, Lennard Yeong and Janice Wong.

Mr. Cheng Heng Chew, Singapore Country Manager, American Express said: “Singaporeans love to dine out and we want to take that experience up a notch by making it unforgettable. That means offering them more than just delicious food and luxurious ambience, but also helping them create new shared memories with their friends and families.

“Inspired by Singapore’s love affair with food, we introduced our Love Dining programme to give our Platinum Card Members premium dining experiences and privileges at selected restaurants, bars and hotels. We’ve also expanded the Love Dining programme to more than 60 restaurants, including those in Singapore’s finest luxury hotels.”

The Love Dining Celebrity Edition menus are available from 4 March to 3 May 2017 to all diners starting from S$62++. American Express Platinum Series Card Members can enjoy savings of up to 50%, as part of their Love Dining privileges. The menus pair each chef’s culinary expertise with a personal memory or inspiration by each celebrity.

Pornsak and The Line, Shangri-La Hotel, Singapore
Mediacorp TV personality, managed by Left Profile, Pornsak, was inspired by his childhood memory of visiting “talad” or the local market in Thailand with his mother to pick out the sweetest pomelos. Pomelo and other traditional Thai ingredients will be featured in a special section at The Line’s renowned international buffet on Mondays and Wednesdays. Some dishes include Crab Meat with Pomelo Salad, as well as Barramundi with Green Peppercorn and Kaffir Lime.

Jeanette Aw and Wan Hao Chinese Restaurant, Singapore Marriott Tang Plaza Hotel
For Mediacorp star, Jeanette Aw, she drew upon her Peranakan heritage and love for fairytales to create a beautiful Oriental-Peranakan fusion menu with Wan Hao Chinese Restaurant. Some highlights from the menu include Braised Chicken with Buah Keluak and Blue Pea Flower Fried Rice with Egg White and Scallop, as well as Baked Lava Cake with Gula Melaka and Coconut Ice Cream.

Lennard Yeong and LaBrezza, The St. Regis Singapore
Former MasterChef Asia finalist and self-taught home cook, Lennard Yeong is an up-and-coming Instagram influencer who prepares beautifully-plated, home-cooked food. An avid traveler, he draws inspiration from Japan and collaborated with LaBrezza to create a unique Japanese-Italian menu. The menu includes Spaghetti, Vongole e Sake, which pairs artisanal spaghetti “Rummo” with dry sake-drizzled vongole veraci, as well as Savoiardi al Thé Verde e Mascarpone, featuring ladyfinger biscuits soaked in green tea syrup, mascarpone mousse, sakura gel and macaron.

Janice Wong and SKIRT, W Singapore – Sentosa Cove
As a visionary in the art of dessert making, Chef Janice Wong’s philosophy is a continuous inspiration for her world of edible art. She brings her signature touch to SKIRT, creating eye-popping, colorful dishes such as Crab and Avocado Salad with Bloody Mary gel and micro salad, as well as Lobster Mai Tai with sweet potato, lobster espuma and king prawn kataifi.

Mr. Pornsak said: “One of my favourite dishes is Yum Som'O (Thai Pomelo Salad) made by my Mum. Whenever I miss her or get homesick, this is the dish that brings me the most comfort. I shared with Chef Davian that my Mum and I would make Yum Som'O together when I was a kid. It's amazing how he managed to come up with 4 dishes from just a memory of mine. Chef Davian Santang
Chef Davian joined Shangri-La Hotel, Singapore in 2014 as Chef de Partie and was promoted to Sous Chef in recognition of his exemplary performance. In his capacity as Sous Chef of The Line at Shangri-La Hotel, Singapore, he is engaged in every step of the food preparation process – from refining and creating recipes to the preparation of the cuisine at The Line. Passionate about crafting exquisite fusion cuisine, he constantly researches and experiments with Western and Asian techniques and ingredients.

Prior to joining Shangri-La Hotel, Singapore, he has had over seven years of culinary experience in hotels including Mandarin Oriental, Kuala Lumpur, The Westin, Kuala Lumpur, and Equatorial Hotel, Kuala Lumpur.
Chef Davian graduated with a Diploma in Culinary Arts from Satt College, Kuching, and has been recognised for his culinary skills in numerous competitions. In 2008, he emerged as one of the top six Best Commis Rotisseur at a competition organised by Confrerie de la Chaine des Rotisseurs - Bailliage de Malaisie.

Brian believes in playing up the strengths of Asian culinary traditions while harmoniously introducing new ingredients and produce into his dishes. He continuously explores the interplay of taste, texture, imagination and presentation, balanced with a multitude of cooking techniques. He pushes the culinary boundary by challenging the conventional approach to Cantonese cuisine through his imagination, creating distinctive dishes while retaining the essence of traditional Chinese cooking.

The 35 year-old has garnered gold medals for prestigious awards including “Taiwan World Culinary Competition 2014”, “Lee Kum Kee International Young Chef Competition 2014”, “FHA Kuala Lumpur Malaysia Chinese Chef Competition 2013”, “Hong Kong Ming Huo International Chinese Chef Competition 2012”, to name a few.

Mr. Lennard Yeong said: “Through my travels around the world, I’ve always taken a liking to the Japanese culture. Light and tasty, food is always made with the freshest of produce which resulted in mind-blowing flavours. Likewise, the Italians also use the finest of ingredients in their various dishes; often accompanied by a fine wine and dine treatment for meals. It excites me to see the results of the collaborative menu I have planned with Chef Armando, where he adapts my love for Japanese cuisine into his deep roots into Italian cooking.”

Lennard Yeong
Following his passion for food, Lennard joined MasterChef Asia after leaving his job as an engineer. With the support of his family, the then 27-year old became an impressionable culinary face around the region, cooking his way up the ladders of the competition.

A finalist of the MasterChef Asia, Lennard continues his cooking journey since and has plans to pursue his love for food. An avid home cook, Lennard enjoys his time in the kitchen as much as he enjoys eating the very same dishes. His Instagram page @Lennardy features beautifully prepared dishes, tantalising a great many and garnering numerous followers over the years.

Chef Armando Aristarco
Armando Aristarco joins The St. Regis Singapore as Chef de Cuisine of its specialty Italian restaurant LaBrezza.

With a decade of experience in the culinary world, Armando brings with him extensive culinary experiences with previous appointments at numerous hospitality establishments.

Born in Torre del Greco, a town in Naples, he began his culinary journey at the tender age of sixteen, when he embarked on a culinary apprenticeship. While completing his culinary education in Italy, Armando spent several summers working as a Chef de Partie in a 4-star resort in Egypt. He then returned to Italy where he worked for several other dining establishments and luxury hotels, including the Michelin-starred Restaurant Vun by Andrea Aprea in the Park Hyatt Milan. Prior to moving here, Armando held the position of Sous Chef at the award-winning Primavera Trattoria Moderna Restaurant at the Ritz Carlton Bahrain.

Chef Chris is the Executive Sous Chef at W Singapore – Sentosa Cove’s SKIRT restaurant. His first foray into the industry began more than 15 years ago was inspired by his uncle, who was a pastry chef in Vancouver.

Chris attended culinary school in England and started his career as a Chef de Partie in a Michelin-starred restaurant, Gravetye Manor located in the United Kingdom. After spending three years there, he then fine-tuned his skills at a variety of well-known establishments in the hospitality industry globally including The Ritz-Carlton Hotel in Sanya, China and The Temple House.

Chris believes in pushing the boundaries of what one knows and never fearing to learning something new. He sees Heston Blumenthal, British celebrity chef and Grant Achatz, one of the leaders in molecular gastronomy, as inspirations for their approach not only to their culinary creations but also how guests are treated in their restaurants.
